What will you learn?
You will learn all about the craft and potted microbiology of cheese making. We will look into what influence ingredients and their quality has on the cheese. And of course, you will also have the opportunity to taste various different cheeses and discuss each one with Sue and Neil, who's an International Cheese Judge. They'll talk, we'll taste and we'll discover how you can tell a great cheese from an impostor.
Who will be teaching?
Sue Arthur is the owner and founder of Over the Moon Dairy, which she started in Putaruru in 2007. Their cheeses are award winning both nationally and internationally. She also set up the NZ Cheese School of which Neil Willman is a director. Neil is also an international cheese judge and trained cheese makers in Australia for nearly 30 years.
Both Sue and Neil recently returned from judging at the International Cheese Competition in Nantwich England (now the biggest in the world) with the trophy for Best NZ Cheese Black Truffle Brie (by Neil Willman).
